Prepare the Lemon-Herb Sauce:

While the shrimp and vegetables are marinating. Mix the lemon juice, Dijon, chopped parsley, cilantro (if using), minced garlic, and red pepper flakes in a small bowl. Then slowly pour the olive oil in while whisking vigorously to emulsify. Season the sauce with salt and pepper to taste. Set aside.
3 Assemble the Skewers

Thread the marinated shrimp and vegetables onto the skewers. Alternate the shrimp with the different colored bell peppers, zucchini, red onion wedges, and cherry tomatoes.
Try not to overcrowd the skewers so that everything cooks evenly.
4 Grill the Skewers
Preheat your grill to medium/high heat around 400-425°F. Lightly oil the grill grates to prevent sticking. Place the shrimp skewers on the hot grill. Cook for 3-4 minutes per side, or until the shrimp are pink and opaque and the vegetables are tender-crisp and slightly charred.
5 Serve
Remove the skewers from the grill and arrange them on a serving platter. Drizzle the lemon-herb sauce generously over the skewers. Serve immediately with your favorite sides, such as rice, quinoa, couscous, or a fresh salad.
